Sauteed Quinoa & Black Beans

​​Ingredients:

  • 2  cups cooked  red quinoa 
  • 1 cup cooked or  canned red kidney beans . If canned, drain and rinse with cold water
  • 1 cup fresh spinach 
  • 1 small onion, chopped 
  • 1 clove of garlic chopped 
  • 1/4  red, green, yellow, orange bell pepper, chopped  
  • 1/4 tablespoon Grace Jamaica Jerk Seasoning
  • Salt and pepper to taste 
  • 1 tablespoon coconut oil

Directions:

  • In a heated saucepan, Sautee bell peppers, garlic and onion in coconut oil
  • Add red beans, combining all ingredients 
  • Add spinach 
  • Add jerk seasoning and salt and pepper 
  • Combine all ingredients and sautee for an additional 5 minutes or so 
  • Enjoy!


Jamaican Styke Ackee & Saltfish

Ingredients:

  • 1 can Grace Ackee
  • 1 small piece of salted cod fish (3-5 ounces)
  • 1/4 of a red, green and orange bell pepper, chopped 
  • 1 small onion, chopped
  • 1 small tomato, chopped
  • Thyme
  • 1 stalk escallion, chopped
  • 1 tablespoon coconut oil
  • 1/4 teaspoon Grace Jamaican Jerk Seasoning
  • Dash of Jamaican all purpose seasoning
  • Dash of black pepper
Directions:

  • Boil  cod fish in water for approximately 15 minutes, to remove some of the salt 
  • Rinse cod fish with fresh water and chop into small pieces 
  • Drain ackee
  • Sautee onions, bell peppers,  tomatoes , escallion and thyme in coconut oil for about 5 minutes 
  • Add chopped cod fish, stirring all ingredients together
  •  Add ackee
  • Add jerk seasoning, seasoned salt and black pepper directly on top of ackee
  • Gently combine all ingredients, let simmer for an additional 5-8 minutes

Sauteed Chickpeas & Collard Greens

Ingredients:

  • 1 cup cooked or  canned chickpeas
  • 1 cup cooked or  canned collard greens 
  • 1/4 of a red, yellow, green and orange bell pepper, chopped 
  • 1 onion chopped
  • 1 tomato chopped
  • 1/4 teaspoon Jamaican jerk seasoning 
  • 1 tablespoon coconut oil
  • 1 tablespoon Italian Seasoning
  • Dash of  sea salt and black pepper 

Directions:

  • Sautee onions, bell peppers and tomatoes  in coconut oil 
  • Add chickpeas , let simmer for 3-5  minutes 
  • Mix in collard greens 
  • Add Jamaican Jerk,  Italian, Seasoning , sea salt and black pepper
  • let simmer for an additional 3-5 minutes 
  • Enjoy !



Oven Roasted Potatoes & Bell Peppers

Ingredients:

  • 1 medium Irish potato
  • 1 medium sweet potato
  • 1/4 red, yellow, green and orange bell pepper, chopped 

  • 1 Tablespoon coconut oil

  • 1 Tablespoon Italian Seasoning

  • A sprinkle of sea salt 

  • Dash of black pepper

Directions:

  • Wash and dice potatoes
  • Wash and dice bell peppers
  • Combine potatoes, peppers and all remaining ingredients in a large bowl and mix 
  • Grease baking dish or pan with a dabble of  coconut oil .
  • Bake for 20-30 minutes or until potatoes are tender.
  • Enjoy!


Spiralized Zucchini and Veggies

Ingredients:

  • 1 large Zucchini -spiraled
  • 1 Cup cooked or canned corn
  • 1 small tomato - chopped 
  • 1/4 red, green, yellow, orange bell pepper - chopped
  • 1 small onion -chopped 
  • 1 clove garlic - chopped 
  • 1/4 tablespoon Jamaican jerk seasoning
  • 2 tablespoon olive oil 
  • 1 tablespoon Italian seasoning
  • Dash of sea salt and black pepper to taste 

Directions:

  • Sautee onion and garlic in olive oil
  • Add bell peppers and tomatoes,  sautee for an additional 5 minutes 
  • Add corn and cook for  2 -3 additional minutes
  • Add zucchini and remainder of ingredients 
  • Combine all ingredients and cook for approximately 2-3 minutes 
  • Enjoy!


Loaded Baked Sweet Potato

Ingredients:

  • 1 medium sweet potato, baked
  • 1 can whole kernel corn, drained & rinsed 
  • 1 can red kidney beans, drained & rinsed
  • 1/4  of a red, yellow, green and orange bell pepper, chopped 
  • 10 oz piece of grilled or baked salmon or chicken breast (optional)
  • 1 tablespoon coconut oil
  • Pinch of sea salt and black pepper to taste

Directions:

  • Sautee bell peppers with coconut oil in medium saucepan for about 2 minutes
  • Add corn and red beans to sauce pan, sautee for an additional 2 minutes
  • Add salmon or chicken and combine all ingredients 
  • Add salt and pepper to taste
  • Split sweet potato in half and add as much meat and veggies
  • Enjoy!



Curried Chickpeas

Ingredients:

  •  2 cups cooked or canned chickpeas, drained and rinsed
  • 2 medium carrots 
  • 1/4  red, yellow, green and orange bell pepper, chopped 
  • 1 can lite coconut milk
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon Jamaican jerk seasoning (optional) 
  • 2-3 tablespoon curry powder
  • Salt and pepper to taste
Directions:
  • Sautee carrots with coconut oils in medium saucepan for about 2 minutes
  • Add bell peppers to saucepan, sautee for an additional 2 minutes
  • Add chickpeas and combine all ingredients 
  • Add coconut milk 
  • Add curry powder, Italian seasoning,  jerk seasoning, salt and pepper 
  •  Combine all ingredients and let simmer for additional 5-8 minutes on low heat, 
  • Enjoy!
